This is the easiest cake to make! So easy, in fact, that I made 5 of them this week to feed a large crowd for our church and they absolutely loved it! This cake comes together by layering ingredients you probably already have on hand, and the result is a cobbler type cake that is wonderful served with fresh whipping cream or vanilla ice cream. There are no eggs to crack…..no electric mixer required….it is just easy!
In a 13 X 9 baking pan, empty can of cherry pie filling and empty can of pineapple.
Blend cherries and crushed pineapple together with a spoon and spread evenly in pan.
Sprinkle the dry yellow cake mix evenly over the top. Duncan Hines, Pillsbury, whichever brand is your favorite.
Melt butter in microwave in a microwavable bowl.
Pour butter over top of cake mix.
Take a fork and lightly spread the butter and cake mix together, carefully not to disturb the pineapple cherry mixture.
Sprinkle the top evenly with coconut.
Sprinkle the top evenly with the pecans.
Bake in a 350 degree oven for 45 minutes, or until coconut and pecans are browned.
Serve with fresh whipped cream or vanilla ice cream.
Crunchy pecans, toasted coconut, sweet cherries, with a cobbler topping = YUM!!
I also love that this recipe can be easily adapted to use whatever canned fruit or cake mix you have on hand.

Peach cobbler is easy to make if you combine 2 cans of peach pie filling, top with yellow cake mix, and 2 sticks of butter.
It is just that easy!
